Processing Fresh Mangoes into Mango Habanero Hot Sauce for Local and International Markets
Upgrading the mango processing plant of Hendy Farms to offer market opportunities to at least 160 smallholder farmers within the Dodowa and Somanya mango enclave. This will minimise fruit waste and losses, increase export and diversify market opportunities for small-holder mango farmers.
The three main objectives of the project include:
- Develop local and international markets for processed products
- Acquisition, upgrading and relocation of processing factory to the Shai Osudoku area
- Develop and build capacity of 160 out grower mango farmers
- Develop international markets for processed products
- Conduct study tour to Anuga, Cologne with Import Promotion Desk (IPD), Germany
- Attend organic trade fair in Dubai, along with the Ghana Export Promotion Authority (GEPA)
- To work with our buyers and off-takers on continuous improvement of our product (Mango Habanero) and product offering for the benefit of final consumers to ensure sustainability of the product on the market
- Develop 3 new product lines in addition to the current three and obtain GSA, FDA and organic certification, as well as export permits for all three products
- Secure 4 international off-taker agreements and 4 local supermarket agreements for the purchase of Hendy Farms’ processed mango products
- Acquisition, upgrading and relocation of processing factory to the Shai Osudoku area
- Move processing facility into the Shai Osudoku catchment area to absorb fruits from smallholder farmers and also provide employment for women and youth at the factory and within the district
- Purchase and install fruit processing plant to add value to fresh mangoes produced by the company farm and other smallholder farmers by processing a highly perishable fresh fruits into a more stable (longer shelf life) product to meet international quality standards for both local and export markets
- Purchase and install pasteurization equipment, packaging and conditioning equipment, refrigeration, bottling and packaging materials
- Develop and operationalize processing protocols and manuals, including standard operating procedures (SOPs), good manufacturing practices (GMP) manuals
- Develop a production & operational plan with allocated tasks and responsibility to all staff assigned
- Develop and build capacity of 160 out grower mango farmers
- Prepare and sign off-taker agreements with smallholders’ farmers within the catchment area
- Establish a demonstration farm to train farmers in best production practices
- Train smallholders in good agricultural / handling practices (GAP and GHP), organic production, and obtain both organic and Ghana green label certification for the farmers and their farms
The project will produce the following key deliverables at the end of the implementation period:
- An upgraded processing facility installed and operational in the Shai Osudoku area
- SOPs and GMP manuals for factory operation produced and implemented
- 12 factory staff recruited and trained in GMP
- 2 acres of demo farm established to train out grower farmers
- Off-taker agreements signed with 160 farmers for the supply of mangoes
- 20 tonnes of mangoes purchased from farmers per season
- Supplementary annual income of 41,000 USD accrued to at least 50 farmers in the first year
- Four agreements signed with international buyers and 4 with local buyers for processed mango products
- Three new product lines developed, bringing the total product lines to six
- 15 tons of products exported per annum, generating 175,000 USD in revenues to Hendy Farms per year
